Members of ACF Professional Chefs/Cooks Assoc. of Rochester took time from their busy schedules and traveled to New York City and the international Hotel and Restaurant show and joined in the effort to "Say Thanks to a Hero" Where the Big Apple Chapter usually sponsors the culinary competitions the kitchens were converted to prepare meals in groups of fifty and then sell this fare to raise moneys for the families of the victims of the 9/11 disaster.
Team leader Michael Vasille, CEC, AAC was joined by N.E. Regional Vice president James Taylor; Chapter President Don Antinore, CEC, CCE, AAC: Chapter members Frank Campigione,CEC, David DiNapoli, Rose Vasille and Tom Paseretti
The team provided the necessary ingredients, with assistance from our Associate members to not only feed the fifty they planned on but twenty extra meals to cover for a team that was unable to get to the Jacob Javits Center.
The Menu for the event started with a Wild Mushroom and Gaot cheese Terrine with Sweet onion Crostini and Herbed Pepper Drizzle, followed by a Roasted Duck Consomme with gingered Ravioli and Harvest Root Vegetables. The entree was a Fire-Grilled Pork Loin with sun-dried Cranberry Cornbread filling and Apple Cider and Balsamic Syrups. The dessert was a Sweet Pumpkin Creme Brulee with Autumn Fruit Purse and Toasted Pepatas.
If this effort were not enough the opportunity to excel even further was presented when the members of Engine 34, Engine 26 and Ladder 21 of Hells Kitchen House, located on 38th Street between 9th and 10th Ave. who were on duty at the time, asked if they could partake of the meal. Chef Don, never one not to volunteer others said "No problem" The Team then took their show on the road. After a tour of New Jersey, Brooklyn and the eastern tip of Long Island they arrivedat the fire company two blocks away . A friendship between these brave firefighters and our culinarians was quickly forged. It should be noted that twelve members of the company were lost on 9/11.
Upon their return to Rochester all the team members commented on how this was a life changing event, and a testament to the members of the ACF.
