A Great Competition
Two Important Choices

Hello everyone,

    Well, if you missed the last meeting, you missed a good one. We had the COTY Challenge! This years mystery basket, which was put together primarily by Chef Redmond, was "Yellowtail Snapper Battle", to coin a phrase from Iron Chef. The mandatory things in the basket where the Snapper, fennel bulbs, salsify, lemon, tomato cous cous, roma tomatoes, baby Brussels sprouts and other "Redmond-esque" ingredients.
Chefs Healy and Slutzky cooked in front of everyone on table top butane burners and had to run back and forth to the kitchen and the common area.

    Both Chefs had 15 minutes to collect their thoughts, look over their ingredients and compose their dish and announce what they would be preparing for us. This is in queue with what would be done on the national competition level in job specific mystery basket events. They then had one hour to cook with everyone watching. No pressure at all.

      Chef Healy offered a pan seared snapper on tomato cous cous with fall vegetable broth, in a simple yet elegant presentation- a bowl, cous cous in the middle, snapper atop that, and the veggies and broth around.

      Chef Slutzky's version of the snapper was done with a lemon fennel cream, stir fried fall veggies, tomato cous cous, and raisin compote. This was presented on a plate with the seared fish atop a cous cous timbale sort of back center, veggies, drizzled sauce and compote in a stainless soufflé cup.

    Both chefs did a great job. Now the time comes for us to make a decision. Our next meeting is the election. Please come and vote, make your voice heard. We will be voting for trustee as well, which is a one year position. The candidates are David DiNapoli who currently holds the seat and has for two years, John Venturo, CEC AAC, a perennial in our chapter and all around great guy, and newcomer Dave Regan, CEC.
   
    We will do something a little different at the next meeting. Since it is the last meeting of 2003, we decided that for a program we would have a holiday party. Bring a dish to pass with you on Tuesday the 25 with enough food to feed 10 people and come meet the candidates and visit with your peers it will be fun. The election will be held at 9:00 pm sharp, and no one will be aloud into the meeting after that time.

    Let's have a great turnout for this meeting. Invite someone new to come and see what we are all about.
