New Places, New By-laws
and Congratulations

Greetings to you all
We had our first meeting of 2004 at the Red Cross on Prince Street at the end of January, and despite a pretty good snowstorm, we had a nice turn out. We will be using the Red Cross as an alternative meeting place this year. This means that if we can not use the Party House, that is where we will meet. Chefs Christo and Miller gave a tour of the facility and a basic walk through and talk about the program and how it will work.
Just so you all know from the looks of things they will be training and teaching hirable students in a sixteen week program that covers basic baking and knife skills to stock and basic sauce making. How nice will it be to have an entry level cook who has been properly taught sound basic skills. This is a great resource for us and an opportunity for a cook to come and learn with you and stay longer than a year in your kitchen.
I would like to send out props to pastry chefs Jim Neuman and Tricia Miller who both competed in this years chocolate ball competition. Both won silver medals and Chef Miller won the chefs choice award Great job guys! Chef Neuman had an incredible chocolate centerpiece and champagne glasses made out of sugar and filled with chocolate mousse. Chef Millers display included a curved tapered set of the "88's" (a piano keyboard) and a gooey delicious chocolate caramel cake with a crispy daquaise in the middle. I would also like to send out props to Chefs Brad Butler, David Festenstien and David Regan, CEC. On Monday February 2, we did an hours d oeuvre station at the Rochester Chapter NYSRA scholarship dinner. Chef Butler created a kabob of Greek cheese with mortadella ham and green olive, pan fried in oil scented with Rosemary, flambéed with vodka and finished with a squirt of lemon juice …yum. He also had a gorgonzola and jalapeno fondue with sliced baguettes for dipping. It was a fun time and the guests all enjoyed the food.
We will be doing another bike raffle this year. We will raffle off the Harley soft tail at the golf outing at BrookLea Country Club on August 30 2004. We will also give away an ATV, and a travel certificate for $1,000.00! The bearer of the raffle ticket will have a chance to win one of three prizes on his/her ticket, which will be priced at $20.00 this year. Come to the meeting and listen Chef Mike Vasile spell out the program for this year.
At the last board meeting we reviewed the COTY criteria. It will be published in the newsletter for all to review. (Also by CLICKING HERE
) The review was done in an effort to streamline and better define the criteria. We have reduced the amount of obtainable goals from 30 to 20, of which 10 MUST be accomplished, instead of 15 of 30. Please review the changes noted in the newsletter and familiarize yourself with them as we will be discussing them and eventually voting on them. If you don't like something or have a question, now is the time to ask it. Also, while on the subject, bids for the 2004 COTY dinner are now open. Get your bid in early!
